Passion Inspiration Fruit Couverture - 8.8oz

The passion fruit flavor in this couverture is genuinely tart and bright, not the fake candy taste I was bracing for. I melted it down for a batch of bonbons and the texture set up smooth with a nice snap. Easily the most interesting chocolate I've baked with this year.

I was worried the passion fruit would taste artificial, but it's genuinely tart and bright, like fresh juice. It sets up beautifully for ganache and the 8.8oz block is easy to chop into even pieces.

I was skeptical about a fruit-based couverture, but this one melts down to a silky texture that worked perfectly for dipping. The passion fruit taste is bright and tangy without being overly sweet. Already thinking about what I'll coat with the next batch.
